Easy Baked Chicken
I love baking chicken breasts because you are almost guaranteed to have delicious, juicy chicken in about 30 minutes. The prep for this recipe is so minimal, which makes it the perfect weeknight meal! Pair it with your favorite veggie or salad and you have a quick, healthy meal!
- 2 boneless skinless chicken breasts
- 2-4 tsp crushed garlic
- 1/4 cup organic extra virgin olive oil
- 1/4 cup gluten-free bread crumbs
- 1/4 cup parmesan cheese
Preheat oven to 425 degrees. Combine garlic and oil in a bowl. In a separate bowl, mix bread crumbs and parmesan cheese together. Dip the chicken in the oil/garlic mixture, and then in the bread crumb/cheese mixture to coat. Place chicken in a glass baking dish and drizzle the remaining garlic/oil around the breasts on the bottom of the dish. Sprinkle the remaining cheese/breadcrumbs on top of the chicken. Bake in the oven for 30-35 minutes until chicken is cooked all the way through. Serve and enjoy!
